It's the last weekend of winter so I thought I'd bake some of these yummy muffins I found in a magazine last night, for afternoon tea after hubby gets home.
You'll need :
♥ 2 cups of self-raising flour
♥1/2 cup of raw sugar
♥1 lightly beaten egg
♥1 cup of milk
♥4 tbsp of melted butter
♥& 1 punnet of strawberries
Preheat the oven to 200C or just under for a fan forced. I lightly greased the muffin pan with coconut oil so they will have a subtle coconut flavour but I am still undecided on this particular oil. I've read some really good reviews on it & also some not so good..so for now i use it to grease the pans when I make muffins or cupcakes & it does leave them with a nice coconut scented/flavour!
Mix all your dry ingredients then add the milk, melted butter & the egg. Lightly mix in the strawberries & cook for 20 to 25 minutes depending on your oven.
Leave to cool for 5 minutes before popping them out onto a wire cooler.
